Spring into Flavor! Four Fun Spring Recipes

Spring has sprung!! Right? Although there’s still a chill in the air at times, I’m working to manifest more spring in my day. One of the easiest ways to do this is to eat and drink like the bees are buzzing, and the birds are chirping while they make their nests. 

I’ve pulled together four of my favorite meatless recipes to share. Now, don’t go anywhere. Just because they’re meatless doesn’t mean they don’t have flavor. Many folks are trying to incorporate more meatless meals into their diets to help our environment, and I know you can do it, too! 

I’ve mentioned that these are some of my favorite meals, which means I’ve tried them, tested them, and LOVED them. I know you will, too. 

Vegan Mango Lassi

Let’s start off with a drink. I was introduced to Lassis when living in Austin and joining my husband’s coworkers for meals during events that celebrated their Indian heritage. I’ve been in love ever since. This recipe is vegan, however you can substitute items to make it vegetarian if you include regular dairy in your diet. I love how this author also helps folks choose the perfect mango for their drinks. 

Roasted Potato Salad

Anything with dill and potatoes will automatically make my mouth water. This is a great side dish to any meal! The hummus gives you some added protein and the roasted potatoes give you a bit of a crunch to enjoy the flavor with. The author mentions several meals you can enjoy this with, my preference is purchasing a Meati™ carne asade mushroom ‘steaks’ and eating the two together. 

Avocado Pesto Pasta

Now for a main dish! This pasta doesn’t just include my favorite fruit; the nuts added give this meal some delicious protein that my kiddos eat up! The author also mentions that you could substitute pasta for other vegetables to turn this into a dish you could serve on sandwiches. I love the versatility of the pesto, but we truly enjoy this on pasta so that our kids can eat something ‘green’ that makes them giggle. 

Vegan Chocolate Cheesecake

After all that preparation and cooking, do you really think I’d leave you with a dessert that would take up much of your time? No way! This simple vegan chocolate cheesecake comes together in minutes and will make you the hero of the morning, afternoon, or evening! (Like, I’m going to judge what time of day you’ll indulge in this?)
