Baked Fish in Butter Olive Sauce with Roasted Potatoes and Broccoli

What. Is. This. Weather. Even though it’s the middle of May, this cool weather had me craving something hearty. But, it’s also sunny and nice… so something hearty AND light? I don’t know… (throws hands in the air). This recipe uses staples that are always in my house: frozen fish, olives (hello dirty martinis…), potatoes and broccoli. The herbs I planted earlier this spring are beginning to thrive, so it was fun making my very first meal of the year with herbs from my garden! You can easily customize this recipe to work with whatever you have laying around, even macaroni and cheese! Added bonus? This baked fish recipe quickly comes together and is husband and kid approved!

For 4 Servings:


For Fish:

  • 1/4 c butter (half of a stick)
  • 1 tbsp olive oil
  • 1 c olives, pitted and sliced (I used a mixture of kalamata and green feta stuffed ones)
  • 2 garlic cloves, minced
  • 1/2 tsp coriander seeds, coarsely crushed
  • 4 pieces of fish, thawed and patted dry
  • salt and pepper
  • handful of cilantro, chopped
  • handful of dill, chopped

For Roasted Veggies:

  • 2 heads broccoli, cut into pieces
  • 1-2 lbs of baby potatoes, cut in half
  • olive oil
  • salt and pepper

Let’s Start Cooking:

  1. Preheat oven to 400. Cut potatoes and broccoli, add to a bowl and toss in olive oil with salt and pepper. Place on a baking sheet and bake for 10 minutes.
  2. Meanwhile, in an oven proof skillet (I used my cast iron) heat butter and oil over medium heat. Once butter is melted and sizzling, add olives, garlic and coriander seed. Cook until fragrant, about 2 minutes.
  3. Season fish on both sides with salt and pepper. Add seasoned fish to the skillet and baste butter mixture on top.
  4. Once 10 minutes for vegetables is up, give veggies a toss to make sure they don’t stick to the baking sheet. Lower heat to 350 and add fish skillet.
  5. Cook until fish is opaque and flaky, about 10-13 minutes.
  6. Remove fish and veggies from the oven, plate and serve immediately.
  7. Before eating, top fish with chopped herbs.
