Summer has arrived. With it, warmer weather. My tastes very much change with the season. In the summer, I crave things like pasta salad, fresh fruits and veggies, and grilled chicken. Below are some of my favorite recipes. Some of these are new favorites. Most of these are recipes I come back to every year. The focus is on stovetop recipes. When the weather is hot, the last thing I want to do is turn on the oven and heat up the house even more. I rounded up some of my favorite recipes I have gathered over the years for you and your family to enjoy!

Pulled Barbecue Chicken

Made in the crockpot-this is a great meal to serve for a big summer get-together. I double the ingredients for a more flavorful sauce (ie 1/2 cup sugar rather than 1/4 and so on).

 Ground Turkey and Sweet Potato Skillet

This recipe has tex-mex-inspired flavors. Green peppers and salsa add fresh flavor. This recipe comes together in 30 minutes or less. You can make it in one pan. Who doesn’t love a skillet recipe?

Avocado Salmon Rice Bowls

A recipe my sister shared with me, this is a delicious way to prepare salmon. It’s fresh and perfect for summer. The cilantro sauce is my favorite part.

Cauliflower Black Bean Tostadas

Crispy cauliflower atop a crunchy tostada with pickled onions-the flavor combination is really enjoyable. I stumbled upon this recipe, and I’m so glad I did; it’s flavorful, delicious, and so easy to make! This recipe from Pinch of Yum is part of our regular rotation. Even my husband and my preschooler love it. Also, this recipe is vegetarian and could easily be made vegan!

Instant Pot Red Curry Lentils Recipe – Pinch of Yum

Coconut curry lentils. This is another meatless option. My family and I love curry, and the added sweetness of the coconut milk is a nice touch. I make a big pot of this, and we have leftovers throughout the week.

Teriyaki Turkey Rice Bowls

Ground turkey by itself isn’t very exciting, but the sauce makes this recipe so flavorful. The ginger garlic sauce is so delicious I could drink it by itself. It’s loaded with broccoli and carrots. If you like Chinese takeout and are looking for a more healthy option, try this recipe!

Strawberry Cream Cheese Pie

My favorite dessert to serve when we have company. It sets in the refrigerator, which is great if you want to prepare it the night before you have company. It has the flavor of cheesecake, but it’s much less work. Fresh strawberries on top make for a nice treat (I skip the jam on top and just do strawberries)

Peach Upside-Down Cake

I make this at the end of the summer when peaches are in season. It’s fresh and light. My husband and I could finish the cake by ourselves; it’s that good.

 Joanna Gaines Lemon Pie

I like to bring this pie to summer get-togethers. The presentation is beautiful. Despite it looking very fancy, it’s a very easy recipe to make!
